Poke Bowl

To my mind there’s nothing more satisfying than creating a delicious poke bowl from beautiful, fresh, organic ingredients that when combined, form a nutritious and comforting, simple meal.

These yummy bowls were created in Hawaii using raw fish, rice and vegetables but really I say…anything goes!


My take on today's Poke Bowl....

  • Avocado - sliced

  • Cherry Tomatoes - quartered

  • Spring Onion finely sliced

  • Lebanese Cucumber - quartered length wise then finely sliced

  • Red Cabbage - very finely sliced

  • Beetroot- grated and the leaves finely sliced

  • Mixed Salad leaves - finely sliced

  • Hard Boiled Egg - quartered

  • Slice of Lemon

Arrange all the ingredients in a bowl, sprinkle with hemp seeds and black sesame seeds then smother all this goodness with delicious tahini dressing!

Tahini Dressing

  • 1/4 cup olive oil

  • 1/4 cup tahini

  • 2-3 tablespoons lemon juice to taste

  • 2 teaspoons Dijon mustard

  • 2 teaspoons honey or maple syrup

  • 1/2 teaspoon sea salt

  • Freshly ground black pepper, to taste

  • 2 tablespoons ice-cold water, more as needed

Combine all ingredients in a lidded jar and shake away until thick and creamy.

Add more cold water if too thick to drizzle.
