Poke Bowl

To my mind there’s nothing more satisfying than creating a delicious poke bowl from beautiful, fresh, organic ingredients that when combined, form a nutritious and comforting, simple meal.
These yummy bowls were created in Hawaii using raw fish, rice and vegetables but really I say…anything goes!

My take on today's Poke Bowl....
Avocado - sliced
Cherry Tomatoes - quartered
Spring Onion finely sliced
Lebanese Cucumber - quartered length wise then finely sliced
Red Cabbage - very finely sliced
Beetroot- grated and the leaves finely sliced
Mixed Salad leaves - finely sliced
Hard Boiled Egg - quartered
Slice of Lemon
Arrange all the ingredients in a bowl, sprinkle with hemp seeds and black sesame seeds then smother all this goodness with delicious tahini dressing!
Tahini Dressing
1/4 cup olive oil
1/4 cup tahini
2-3 tablespoons lemon juice to taste
2 teaspoons Dijon mustard
2 teaspoons honey or maple syrup
1/2 teaspoon sea salt
Freshly ground black pepper, to taste
2 tablespoons ice-cold water, more as needed
Combine all ingredients in a lidded jar and shake away until thick and creamy.
Add more cold water if too thick to drizzle.
