Turmeric Brown Rice Salad
Try this Turmeric delight from our friends over at Goodness Catering.
2 cups brown rice 1 cup slivered almonds 1/2 cup currants 2 large carrots 1 small onion 2 cloves garlic 1 bunch parsley 2 tbsp turmeric 2 tbsp sweet paprika 1 tbsp ground coriander 1 tbsp ground cumin
1. Cook brown rice in salted water. Just enough water to cover the rice. Once rice is cooked drain well and set aside.
2. In a seperate pan heat some olive oil and saute onions with garlic. To this add the slivered almonds and aromatic spices. Once onion mix is well combined add currents and cooked drained rice. Mix well.
3. Great carrot's, chop parsley and fold this through rice mix before serving. Season with salt and pepper.
